Fast lunch, not fast food. iLunch opens its first Polish restaurant in Gdańsk

 

iLunch – a concept that has rapidly grown across Lithuania, Latvia and the UAE – is officially launching in Poland. The brand’s first restaurant will open in January at Olivia Centre in Gdańsk, marking the start of an ambitious expansion strategy: 100 restaurants nationwide and €50 million in planned investments.

 

A new approach to the lunch break

 

iLunch has redefined quick dining with its “fast lunch, not fast food” philosophy. Every dish is cooked fresh on-site, and meals are served within only 2 minutes. The menu is built around modern European cuisine, enriched with local flavours and occasional international accents, with new balanced dishes introduced every day.

 

The restaurants operate Monday to Friday from 11:00 to 15:00, focusing solely on what matters most: the perfect lunch for busy professionals. Guests at Olivia Centre can enjoy their meals on-site, while residents across Gdańsk will benefit from fast home and office delivery.

 

Technology-driven efficiency

 

At the heart of the iLunch model is advanced technology that streamlines the entire customer journey. Digital ordering via tablets, automated delivery systems and optimised kitchen processes allow each restaurant to serve up to 1,500 customers a day while maintaining exceptional quality.

“People want to eat well, but they don’t want to waste time waiting – especially during working hours,” says Aurelijus Jasevičius, founder of iLunch. “We created iLunch to bring that idea to life: fast lunch, but not fast food – a place where technology, nutrition and everyday convenience come together.”

 

From Vilnius to international expansion

 

The iLunch story began in 2016 in Vilnius, where Aurelijus launched the first restaurant and the foundation of the concept. Growth accelerated when Donatas Vaitasius joined as CEO in 2019, strengthening the operational and organisational structure at a crucial scaling moment.

 

Under this leadership, supported by a growing team, iLunch expanded to more than 40 restaurants in Lithuania and successfully entered international markets, including Latvia and the United Arab Emirates. Today, Donatas continues to oversee day-to-day operations, ensuring consistent quality, brand identity and customer experience across all markets.
